Winemaking
The fruit is destemmed and lightly crushed before fermentation in stainless steel tanks using selected yeasts at a temperature of 28ºC with twice daily remontage. There follows 8 days maceration before the wine is run off to tank for 4 months maturation with French oak staves prior to bottling.
Tasting Note
Deep Coloured, the nose shows spice, blackberry and cassis and a hint of oak. The palate is round, smooth and spicy.
