The One

“The One” – our 1st birthday beer, and it’s a big one, weighing in at a heavy 17.2% ABV. This beer is a freeze-distilled imperial stout, with a big base beer brewed with 7 different malts and two hops, which was then fed with dextrose during fermentation to boost the original ABV.

This is where it gets interesting – once fermentation was complete, we transferred the beer to kegs and froze them. Since water freezes at a higher temperature than alcohol, we end up with a beer slushie. This allows us to transfer the liquid beer to another keg while leaving the ice behind, resulting in 1/3 less beer but a much higher ABV in the finished product. After sending a sample off for laboratory analysis to double-check the ABV, we end up with a tasty 17.2% final product.
