An outstanding cheese that shares the characteristics of both Dutch and Alpine cheeses! Lynher Dairy only use pure ingredients, locally sourced. They make award-winning cheeses in open vats using full fat milk from their own herd and other carefully selected Cornish farms. Every single truckle comes from a small rural dairy near Truro.
Originally derived from a Gouda style cheese, Kern is an extra mature, hard cheese, with a sweet, savoury and nutty flavour. While being derivied from a Gouda style, Kern is enhanced with Alpine starter cultures and the curds are scalded to create a caramelised flavour, after which it is pressed into large moulds. After brining and coating in wax the rich layers of taste are enhanced by a lengthy maturation process: around 16 to 24 months, resulting in a dense and intense cheese not dissimilar in flavour and texture to a Gruyere or a Comté.
Consider serving with an Italian Soave or French Picpoul which would beautifully balance and accentuate this Cornish Kern. Also available in store at Bitterne Park Stores!
