Producer
Ravier has been in the family for generations and is currently run by Philippe and his son Sylvain who joined him in 2004. They produce 21 different cuvées from their 35 hectares spread over four very distinct terroirs a few kilometres south of Chambéry in the French alps, including vineyards in the superb Chignan appellation. They carry high environmental value certification, with the vineyards meticulously hand cared for, and winery interventions kept to a minimum. Whilst much Savoie wine is produced for an undemanding local market in the resorts of the Alps, Ravier is amongst a growing band of growers wholly dedicated to quality and showing what is capable in these high vineyards, with wines of intense fruit and crystalline purity.
Winemaking
After careful sorting, the grapes are placed in the vat belt to avoid crushing. Cold prefermentation maceration phase between 6 and 10°C during 24 hours. Maceration normally lasts from 2 to 3 weeks. No igeage, no delestage, only gentle and daily battonage. Fermentation process lasts during approximately 15 days. Then begins the malolactic fermentation included the marc. The wine is aged for a period of 3 to 6 months.
Tasting Note
An intensely coloured ruby hued wine with generous cherry fruit and violets. A fleshy and powerful expression with a lick of minerality and plenty of structure.
Food Matching
The Mondeuse will impress when paired with small game, lentil and sausage stew, red meat and alpine cheese. Also wonderful with ethnic or spicy dishes.
